Hi there. I’m Jennifer Smith, mamascoldcoffee’s “favorite” sister in law. I say that because I’m the one who cooks and bakes for her and THAT is the way to EVERYONE’S HEART!!! I’m 37 years old; married to my best friend Bryan for going on 13 years, and we have three children aged 7, 9, and almost 11. I’m a full time medical coder by day and a part-time Texas Cottage home baker by night. To say I’m busy is a major understatement, but I wouldn’t have it any other way. Most days I feel like a complete and total hot mess that can’t even pull together a bowl of cereal, but the one thing that does make me feel like I’ve got it together is being able to make and have dinner as a family. So I am going to share my most favorite, kind of healthy, easiest and quickest One Pan Italian Chicken Dinner with you.
Here is what you will need:
1 –large cookie sheet
4-chicken breasts (cubed)
4-russett potatoes (or any kind of your favorite potatoes) cubed
1 head of broccoli roughly chopped
1 small bottle Italian dressing (amount to use is variable to taste but at least half a cup)
salt and pepper
Preheat oven to 425 degrees.
(To make clean up even easier cover your cookie sheet in aluminum foil. It’s not necessary but it does save freshly manicured hands from having to scrub the pan.)
Spray the cookie sheet with some olive oil spray.
Lay the chicken in a row on one side, then the potatoes then the broccoli or go crazy and mix it up either way just make sure everything is laid out as flat as possible.
Drizzle the Italian dressing over the food and then salt and pepper to taste.
Place in the oven for 20-25 minutes and voila; dinner is done dude. This recipe is so versatile, you could use pretty much any meat or vegetables with it. Except fish, fish is so darn delicate!
