Crockpot Queso Salsa Chicken Tacos

I’ve had candles burning in our home, my Father In Law already almost burned our new home down! 😂 I’ve been trying to get it to smell homey, not like fresh paint, like us!! &&& then I realized I should cook a yummy crockpot meal!! Cooking alllll day long always makes your home smell yummy!!! I made Crockpot Queso Salsa Chicken Tacos!! We got our table and lights up outside and got to have our first family summer dinner out on our patio tonight too!! I have shared my Crockpot Salsa Chicken recipe before but here it is mixed up a little!! It’s SUPER SIMPLE!!! It feeds about 6 people!!

Ingredients Needed:

  • 15oz Queso Dip
  • 16oz Salsa
  • Taco Seasoning Mix Packet
  • 4 Chicken Breasts
  • Mexican Shredded Cheese, Sour Cream, Any Other Taco Toppings your Family Loves
  • Tortillas
  • (Optional) Can of Corn

Step 1: Place Chicken Breasts on the bottom of crockpot.

Step 2: Sprinkle Taco Seasoning Packet over Chicken. 

Step 3: Pour Salsa for the next layer. 

Step 4: I poured the Queso on top and then mixed the Salsa and Queso just a little with a spoon. I moved the chicken around just a little to make sure some of the mixture got around it all!! Keeps it all moist!!!

Step 5: Cook on HIGH for 2 Hours!! 

It smells AHHHmazinggg in our home now!!!

Step 6: Shred the chicken! I just used 2 forks and pulled it all apart! I left it in the mixture to keep it soaking and get extra flavor on the inside of the chicken breast!! 

This is when I started cooking the rice, getting all of the taco toppings out, warming up the tortillas!! Letting it sit for a few minutes!! Then I took all of the chicken out of the crockpot and put it into another bowl! Help the chicken drain a little and not make your tacos soaking and get soggy!

TA DA!!! Put any toppings you’d like on your tacos!! We added a little more Mexican Flavored Shredded Cheese and Sour Cream with a side of Spanish Rice!! Some times we add in a drained can of corn to the crockpot!! Just an extra pop and a vegetable snuck in there! lol We used mild everything since we have a little one!! But you could easily make this spicy with hotter salsas and queso!!
